Rainbow Sugar Cookies

I’m starting a new tradition where I cook/bake something in the kitchen with Hoda on the weekends. Hoda made her first batch of  rainbow sugar cookies this past weekend and she was intrigued the entire time. She stayed focused and had a blast mixing all the fun colors into the cookie dough. This is a great way to kid your little ones involved. Cooking is a valuable life skill that teaches children about nutrition, food safety, as well as building fine motor skills.

I originally wanted to make shortbread cookies but apparently they require A LOT of butter so I decided against that hah! I was a little skeptical in the beginning because I thought by mixing the colors or baking them, they might end up turning gray. That didn’t happen. They turned out delicious and so beautiful! I guess we are ready for spring!

The sugar cookie recipe is so easy. I actually got it from Allrecipes.com and then put in my modifications to make it rainbow. Enjoy!

Rainbow Sugar Cookies

Ingredients:

2 ¾ cup all-purpose flour

1 tsp baking soda

½ tsp baking powder

1 cup butter softened

1 ½ cup white sugar

1 egg

1 tsp vanilla extract

4 different color food coloring

 

Directions:

  • Preheat oven to 375 degrees.
  • In a small bowl, mix together the flour, baking powder, baking soda and set aside.
  • In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and vanilla. Gradually mix in the dry ingredients.
  • Once dough is formed, separate into 4 even pieces
  • Add a couple drops of different color food coloring into each section and kneed until the color spreads throughout.
  • Take a small piece from each color dough in your hand and roll them into 1 inch balls. Place onto greased cookie sheets
  • Bake 10-12 minutes or until slightly golden.
  • Let stand on cookie sheet for two minutes before removing
  • ENJOY!
