Simple and Filling Suhoor Recipe

Quinoa Avocado Bowl

It’s been a little over a week since Ramadan started and my energy is just out the door. I’ve been waking up at 7:30 every morning because of Hoda and by 10:00am I am already exhausted and hungry. Since our fasts are roughly 16 hours long this year, I need to eat something for suhoor that will give me enough energy to tackle the day.

I was looking up what types of food I can eat that will keep me full and energized throughout the day as well as something that is easy to make. The best energy releasing food is avocados and high protein food is eggs so I just put them together and added a little quinoa for carbs.

Ingredients:

1/2 cup cooked quinoa. (Recipe below)

1/3  avocado

2 soft boiled eggs

Old Bay seasoning (optional)

 

Directions:

  1. In a bowl, add quinoa, avocado and boiled eggs.
  2. Sprinkle with any seasoning, (old bay is my fav)

How to cook Quinoa:

Ingredients:

1 cup quinoa

2 cups water

2 cloves garlic (minced)

1 tsp lemon juice

Salt and pepper

Directions:

  1. Thoroughly rinse 1 cup of quinoa under cold water
  2. In a pot, boil 2 cups of water, add garlic, salt, pepper, and lemon juice
  3. Reduce heat to medium/low and cover. Cook for 20 minutes
  4. Turn off heat and leave covered for 5 minutes
  5. Use a fork to fluff quinoa and serve
